ABSTRACT: Huaiyang cuisine, as the main cuisine for Chinese state banquets, still faces problems of inconsistency, lack of uniformity, and failure to accurately convey the connotations of dish names, which seriously hinders the international promotion of Huaiyang cuisine. This paper takes the dish “Sweet and Sour Squirrel-Shaped Mandarin Fish” as the main research object to study dish name translation. It examines the connotations of “Sweet and Sour Squirrel-Shaped Mandarin Fish”, the reasons for the confusion in its translation name, and analyzes it in detail using the method of analogy translation and functional equivalence translation. It suggests that the English name of “Sweet and Sour Squirrel-Shaped Mandarin Fish” should be standardized in the field of translation to promote the standardization and consistency of terminology use and the promotion of Huaiyang cuisine’s international publicity.
