ABSTRACT: The consumption of a mixture of leafy vegetables has always been a practice anchored in the dietary habits of the people of Brazzaville. The objective of this study was to evaluate the acute and subacute toxicities of the aqueous extract of the recipe based on three leafy vegetables (Amaranthus hybridus L., Spinacia oleracea, Brassica campestris L.) in laboratory rodents. The aqueous extract of the food recipe was administered orally using a cannula.
