ABSTRACT: Food safety is an important part of the healthy safety system and is closely related to people’s health. Peanut is an important daily food and oil product in China. It is very important to ensure its safety, but peanuts are easily contaminated by aflatoxin. How to efficiently detect aflatoxin in peanut is particularly important. This paper reviews the related research literature of aflatoxin in peanuts at home and abroad in recent years, discusses its sources, hazards and detection methods. The advantages of laser-induced fluorescence detection technology were discussed, and some suggestions for the future detection of aflatoxin in peanut were put forward.
