Special Issue on Applied Food Microbiology
Applied
Food Microbiology focuses on the practical use of microbiological principles to
improve food safety, quality, preservation, and production processes. This special
issue explores the roles of microorganisms in food systems, including
beneficial microbes used in fermentation as well as pathogenic and spoilage
organisms that affect food stability and public health. It highlights recent
advances in microbial detection technologies, control strategies, and
innovative preservation methods aimed at reducing contamination and extending
shelf life. The issue also welcomes studies on microbial ecology in food
environments, antimicrobial resistance in foodborne pathogens, probiotic
applications, and the integration of modern molecular and genomic tools to
enhance food safety management and sustainable food processing.
In this
special issue, we intend to invite front-line researchers and authors to submit
original research and review articles on exploring Applied
Food Microbiology. Potential topics include, but are not limited
to:
-
Antimicrobial resistance in food microbes
-
Biofilm formation in food systems
-
Fermentation microbiology
-
Food preservation microbiology
-
Food spoilage microbiology
-
Foodborne pathogens
-

Authors
should read over the journal’s For Authors carefully before submission. Prospective
authors should submit an electronic copy of their complete manuscript through
the journal’s Paper Submission System.
Please
kindly specify the “Special Issue” under your manuscript title. The
research field “Special Issue - Applied Food Microbiology” should be
selected during your submission.
